Among the many consequences of Italian emigration, its role in the export of Italian food products (and cuisine) has never been considered in the abundant literature existing on the topic. The present article deals with this theme for the first time and focuses on the spread of traditional Italian models of consumption and food in the world. In particular we will deal with the quantitative relationship between migration and the exportation of canned and preserved tomatoes. We use a panel data covering the period 1897-1933 and show how emigration widely contributed to the exportation figures for this product.

Abstract
