In the 1800s, breeding sheep was essentially tied to the manufacturing of wool. The production of pecorino cheeses was directed toward one’s own consumption or to the local markets, and almost all of the cheesemaking was originally homemade or came from transhumance producers. This productive system underwent a financial crisis due to the agrarian reform. By the end of the 1950s the dairy industry of Tuscany was borderline. The recovery started in the second half of the following decade, when the breeding systems were oriented towards to the production of milk. In 1987, Tuscan pecorino was a recognized Dop product. The consortium for the protection of the denomination of origin, watching over the production technique, contributed to reduce the specifications and to the creation of a consistent product.
Nell’Ottocento l’allevamento delle pecore era legato essenzialmente alla manifattura della lana. La produzione di formaggi pecorini era rivolta all’autoconsumo o ai mercati locali e la quasi totalità delle caseificazione avveniva in laboratori casalinghi o in aziende transumanti. Questo sistema produttivo fu messo in crisi dalla riforma agraria. Alla fine degli anni ’50 l’industria casearia toscana era ormai marginale. La ripresa iniziò nella seconda metà del decennio seguente, quando i sistemi di allevamento furono orientati alla produzione di latte. Nel 1987 il pecorino toscano fu riconosciuto prodotto Dop. Il consorzio per la tutela della denominazione d’origine, vigilando sulle tecniche di produzione, ha contribuito a ridurre i particolarismi e alla creazione di un prodotto omogeneo.
